It’s interesting, as I sit down to write these dinner posts I often can’t remember what we actually ate this week until I look at the photos (you can see I’m using the term ‘interesting’ very loosely here). Sometimes I think my meals were boring but then they look pretty good all lined up. I have a feeling that’s not going to be the case this week… Let’s take a look shall we?
Monday night we were both feeling a little stuffed from our super bowl eating extravaganza and kept it pretty light with some grill panned sea bass(won’t share the cooking method since I messed it up), some couscous and roasted frozen broccoli.
Tuesday night we’ve already discussed and it was Mobo.
Wednesday night was breakfast for dinner with Trader Joe’s chicken breakfast sausages (about one point each! Love these.) Eric had scrambled eggs and toast and I had a toad in a hole (or egg in a basket I suppose).
Thursday night I tried a recipe for Homemade Hamburger Helper.![]()
Eric, who doesn’t like most packaged, frozen or processed foods has a soft spot for Hamburger Helper leftover from camping memories from childhood. I happen to love most frozen, boxed and processed foods but, for some reason, had only had hamburger helper one time!
I thought this recipe looked cool because of the one pot-ness. Brown beef, add everything else, including dry pasta, stir and cover. That’s it!
Unfortunately, we didn’t love this one. It definitely wasn’t bad, it was actually pretty tasty, just a little flat. Tasted a little like it was missing something. A fun experiment though!
Friday night Anna and Jordan stopped by with a bottle of wine.
Being the extremely accomplished dinner party hostess that I am I set out this frozen pizza for everyone and called it hors d’oeuvres. Only the best for my guests!
And after they left we both ate cereal. Voila, dinner is served!
So now that I’ve actually looked at this week’s meals I think it’s safe to say that I could have gone a bit higher on the veggies this week! Wow.
For my superbowl food indiscretion I earned myself a gain of 0.2 pounds at my weigh in this week. I’ll take it!
And now I’m off and trust me, dinner tonight is going to be WAY more exciting than any of this stuff!

What did you have for dinner this week?
We didn’t have a real exciting week of dinners, but Thursday Sherry came to dinner and Michele made a classic quiche (Ham and swiss) very good. We had it for dinner last night and watched “The Way.” I highly recommend the movie.
Yum, quiches make the best leftovers! I’ve never heard of that movie, I’ll check it out!
It all looks good to me. Being single and eating alone is usually a very boring experience. I occasionally cook for myself. I seem to live on Trader Joe’s offerings more than I should…but fortunately I have a wonderful outlet for cooking creativity because I spend so much time with Lanae and her family. We eat like kings when we have get togethers and I love it!!!
I know, you guys make the most awesome feasts and seem to have such a good time with it! If you ever feel like cooking, you are MORE than welcome to make me dinner:) The one you made me was the best ever!
